Indigenous yeast, extended skin contact and finished in an off dry style. There is lots to be said for attempting to make a Semillon for everyone. I love this inclusive approach. Lemon Myrtle, pineapple hull and nashi pear. The palate remains filled with citrus lemon and grapefruit and switches quickly to the tug of war between acidity and fruity nectar. It makes for one succulent drink and still provides that lower alcohol spectrum for sessionability. This would be an absolute super star wine to take to your local Thai. Complimenting the heat of Thai herbs and spice. Think Krapow pork or Pad Kra Pao for the win.
