One of two sibling traditional method sparklings – the other is a NV – from boutique Kiwi producer Hawkesbridge, both of which are available in Australia through Dan Murphys.

Being chardonnay dominant, this leans to the more frisky end of the fizz spectrum and is right up there in the green apple acidity and crunch department. It’s a wait there’s more kind of wine, however, given its three years on lees before disgorgement which provides plenty more interest. The mousse is excellent, fine and persistent, and carries good flavour with it for a decent linger. A terrific food sparkler – oysters without thinking and most definitely roast pork belly if the bottle lasts while cooking.
