This is such a fine Blanc de Blancs expression of the Grand Cru Mesnil Sur Oger and is the newest release in the market from 2014. Organically grown, zero dosage and disgorged in April 2022, it is all freshness. There is a subtle lemon zest note on opening. Finely textured with silky, creamy definition on the palate. The greatest attribute however, is the persistent back palate, showing depth of flavour with lemon meringue and a green apple touch. To match, I prepared a piece of pan-fried salmon, aiming for a raw centre with a crisp exterior. I topped it off with an Australian twist using freshly roasted macadamias alongside salty chips, snow peas and buttered carrots. The wine’s delicious drive synced with the creaminess of the macadamias, leave a long lasting biscotti finish. An outstanding grower champagne that can match the greatness of the very best cuvées.
