It’s amazing how a little barrel fermentation can transform a sauvignon blanc into something quite different. Sure the vibrant tropical fruit is still there but it’s slightly muted on the nose but significantly enhanced on the palate. This one was fermented with wild yeast in 25% new French oak. The dry savoury and slightly nutty finish is appealing.
