Chewy, vibrant and full of heart – this is a wonderful Fiano… and a little bit of a regional unicorn. Apples, pears, peaches, nectarines, apricots and citrus. It’s youthful, varietal and has a deep base note. Perhaps the use of strictly free-run juice has something to do with that. In the mouth, it’s like a toddler hyped up on candy: fun to watch and undoubtedly gorgeous. More orchard fruit. And, as you’d expect from Fiano, there’s that waxy, honeyed note, in both flavour and texture. It’s a mouthful, finishing with girth, lemon oil and good length. Great to see another alternative variety coming out of Western Australia at this level. Pair with a stone fruit and tomato salad, topped with a big, fat burrata.
