Fruit is from the Karasek’s Vineyard handpicked and whole bunch pressed, with lees stirring. Matured in French oak for nine months. A curl of green apple skin is intermingled with sweet and salty popcorn, lemon balm and some peach cheeks. There is a hint of preserved lemon rind, some grainy sandstone grip and a hint of buttered toast. Acidity flows with some sea salt salinity and the crispness of baked crostini. A wine with good intention and persistence, savoury oak nuances and lingering notes of brown butter. This is drinking well now and will have the ability to age, developing those crumbly biscuit tones over 5-8 years. Serve with a caramelised onion and blue cheese tart.

Shanteh cut her teeth at Sydney’s Award-Winning Quay restaurant where she worked for over a decade and was Head Sommelier from 2018 till 2022. She has been nominated for the Good Food Guide Sommelier of the Year award on three occasions and claims that her experience as a Len Evans scholar as one of the highlights of her career. Shanteh hosts her own weekly podcast ‘Over A Glass’ with the Deep in the Weeds Network and spends her time writing for various publications and judging at numerous wine shows across the country.
