UMAMU Estate MacAnn Sparkling 2019


On lees for 15 months. Disgorged in October 2020. 4g/l dosage. Made from Semillon grapes and highly perfumed with lemon lime cordial. Elderflower and golden kiwifruit. Shaved fennel, green apple skin and lime curd. Buttered toast, wild lime pickle and caper berry. Traditional method sparkling Semillon isn’t something you come across often and the results are unique. A touch herbal, nuances of oak and cheesy lees. The dynamic flavours of Semillon as it develops in complexity adds an exotic fragrance and acidity is perky and driving. I’d say a raw kingfish with jalapeno and ponzu would be a very nice pairing indeed.
