Some exceptionally clever winemaking here, using fruit from 50 year old vines, with one larger ferment in concrete tulips (with 5% whole berries and bunches) and the remainder in stainless steel on full skins. The result is a beautiful interpretation of Barossa Semillon with distinct concentration and flavour. Noticeable salinity shines alongside pithy ripe grapefruit, beeswax, saffron and cut pear. There are fine chalky phenolics that offer subtle grip and tension. Tangy yet generous, with waves of freshness that beg for something salty. Delicious. Semillon done very, very well
