Sweet vanilla bean, paprika and dark chocolate shavings. Free flowing natural acidity is the key factor that indicates the moderate Hunter Valley region here. It’s compressed without being heavy, slinky without being simple. It’s tailored and made to measure. It reminds me of the kind of Hunter wines I fell in love with years ago. Drinking well now and will cellar gracefully over 8-15 years. Drink with a well seasoned pork chop, sage and brown butter.
