A selection of the best certified blocks made from a mix of gingin and Dijon 95 clones. Powdered icing sugar, shaved ice and lemonade fruit segments. Lemon verbena, candlenut and crème fraîche. Alluring in its way of enticing you into the glass further. The fruit is compact and coiled while acidity maintains tension throughout the palate. There is a crunch of peach skin in the middle palate and the wine continues to evolve with each sip. 9 months in French oak of which 32% was new seems to be a seamless fit for this chiselled and artfully poised wine. Drinking like a dream, it will cellar but I doubt you’ll have the resilience. Serve alongside the best triple cream brie you can get your hand on, at room temperature so it’s oozy!
