Fruit is sourced from the certified biodynamic Lark Hill Vineyard in Bungendore. Matured in 500L puncheons of which one third was new. Additional 12 months in barrel. Gorgeous concentration and finesse from a mix of clones. First up is Christmas cherries and pit, alongside blood plums and ironstone. Rusted tin, granitic earth and Bilberries. The palate leans towards its savoury side with cumin, burdock root and mushroom. Oak too is spiced and more meaty than sweet. Its tannin frame uplifts the entire drinking experience of the wine and leaves you chewing along awaiting the next sip. A wealth of layers and nuance and highly moreish. This is pine mushrooms and gooey cheese on toast territory. Drink now and will continue to evolve over the next 3-5 years.
