Peter Piper may have Picked a Peck of Pickled Peppers but if I were Peter I would have picked a bottle of Picpoul Prosecco. A surprising duo that, forgive me for saying, bears resemblance to the Aussie mullet, as this too is business in the front and party in the back. A combination of Picpoul’s vibrancy and clean cut acidity with Prosecco’s mouth filling mousse and the fun of wizz fizz sherbert nostalgia. Unlike the controversial coiffure, there is some demure to this sparkling with whispers of lemon sorbet, tonic water, limoncello and rock salt. Green apple flesh texture, yuzu and hints of thyme are carried by a dry, chalky finish. Not just for alliterative purposes but there is inclination to a Parmesan flavoured pairing. Arnotts Cheds anyone?
