Hunter Valley Semillon in its prime – in other words eight years and singing in a pure and clear voice. A light green to gold in the glass, with aromas that cross over from cut hay to ripe lime, flesh and curd, a note of exotics as well, like rainforest herbals perhaps. With this variety, acidity when young can be challenging, but via bottle maturity the flavours become more deeply complex to balance out its tangy sensations – citrus sorbet and soursob grassiness rising out of the tingling palate to linger for eons. Everything you will desire from a maturing Hunter Valley Semillon.
