This wine hails from the Three Ponds property, in the lower Hunter Valley. Made in the classic Hunter style using inert tanks and then bottled early to allow the purity of this interesting variety to shine.  As a young wine it shows aromas of yuzu zest and Fuji apple. It’s light and vibrant with a hint of salinity and a crispness that keeps you reaching for your glass. With time this zesty quality will ease into the honey and toast of aged Semillon, such a delightful reward for patience. Smash it with some oysters now, you know they’re better in winter, and pop some away in the cellar.

Nicole loves wine. So much so that she gave up a successful career in Pharmacy, perfected her spitting technique, and moved from sunny Queensland to the wine-drenched laneways of Melbourne. Stints in hospitality, wineries, retail, sales and marketing filled the next few years while Nicole built her knowledge and searched for the right path.
