This is the first release from a brand-new producer, and given the pedigree of the single vineyard, my expectations are high. Young and aromatic, the bouquet features subtle notes of lychee, white flowers, and a hint of spring onion. I paired it with pan-fried salmon, which balances the wine’s zesty, bright acidity with its oiliness. The wine’s layered mid-palate and the creaminess of the potato mash create a substantial match. To further enhance the wine’s vivid character, I served it alongside sliced ginger for Japanese pickled ginger, roasted zucchini, and buttered carrots. Originating from Eden Valley, the wine’s juiciness refreshes the palate and cleanses the food beautifully, leading to a bright lemon and lime finish with weight on the back palate. Overall, this is a remarkable inaugural effort, demonstrating both class and sophistication with the variety.
