This is a fascinating expression of Sauvignon Blanc that leans heavily towards an almost French style thanks to its subtle fruit characters. It is a super pale, almost watery white showcasing it comes from one of the coolest regions on the Australian mainland. There is fantastic mountain stream purity to the fruit with restrained guava, citrus and nettle aromas – this is the polar opposite of the explosive Marlborough style. The palate is then fine and chalky – those restrained fruits sitting on a bed of zesty acidity that drives its lingering finish. It is on the tart side but give it some oysters and it will come into its own.
