Quite an elegant expression of Barossa Cabernet Sauvignon thanks to its Eden Valley origins which offers up layers of blackberry and chocolate laced with dried herb aromas, new and older French oak neatly tucked in behind. Mid-weight but quite firm with a Cabernet tannin frame, there is a hearty, savoury feel to the fruit which shows good concentration and length thanks to that core of tannins. It needs a couple of years to flesh out but then will be mighty fine with Beef Stroganoff.
