Paracombe Pinot Noir Chardonnay 2023

A young sparkling given some extra gravitas through the addition of older vintage cuvées. No ages are given for the reserve wines, but you can see there is some age on show by the mid-golden hues of the wine. Aromas of baked bread, toast, peach, stone fruits, citrus with a cashew nuttiness and hints of earth and mushroom. Smooth autolysis is a feature with bready yeast derived complexity. Nicely textured throughout with fine acidity. A fungal-earthy savouriness adds another layer of complexity on the palate, finishing with a gentle nuttiness.
