Organically farmed on a southwest facing site that sees good afternoon sun. Fermented in stainless steel before some lees work over 6 months for texture and added interest. Delicate lift and aromatic poise here. Pear, lemon blossom, green almond first up, followed by fennel, lemon thyme, honeysuckle, and a glimmer of lanolin. Light to medium in body with a gentle waxiness that’s cut by citrusy acid, framing notes akin to the nose. This is equal parts fresh and textural, a Gavi of character and interest.
