Eloquent, effortless and layered – this is a great little sparkling. Apple crumble, peaches and shortbread. A single-vineyard wine made from Pinot Noir and Chardonnay using the traditional method (as all fine sparkling wines are). It dances between yeasty-complexies and fresh vibrancy. In the mouth, it is rich and creamy, but not overdone. The apples return as tarte Tatin, and there’s lemon curd too. Taut, linear acidity frames the wine, bringing everything back to centre, while the finish is full of walnut skins and poached pears. An enjoyable wine from top to tail. And it overdelivers for the price. It really doesn’t need food, but I would suggest tinned caviar (which you can get for around $80 from most good independent grocers), sour cream and crispy potato chips.
