Pale salmon in colour and gorgeously savoury with aromas of white strawberries, pressed watermelon, and a hint of Provençal herbs. On the palate it’s deliciously dry, with a whisper of sea salt minerality. There’s a silky, mouth filling texture with bright ruby grapefruit flavours and refreshing acidity. This savoury style is so versatile and makes food pairing easy, but I’m going with a simple Spanish appetiser of pressed watermelon, wrapped in Jamon.
