Meaning ‘careful’ in Italian, ‘Attento’ is 100% Pinot Grigio grown at 800 metres on rich volcanic soils. Hand-picked and whole bunch-pressed, with the first portion immediately fermented in aged oak barrels. There’s depth and intrigue to the savoury perfume: woody spice, kimchi and cheesecloth notes are slowly filled out by pear and pickled ginger. So much interest and uniqueness here. The palate is fulsome and intense, with pear, kumquat, nutmeg and pickled ginger at the fore, while the cheesecloth notes linger beneath. There’s a good cut of citrusy acid to freshen the finish, which carries to good length. I like this – it leans into the variety and ekes out an expression of savoury complexity and unique appeal.
