The estate has a very long history of wine in Chablis, today it is managed by third generation Frederic Goulley and his wife Céline Brocard (daughter of Jean Marc Brocard) and made alongside the wines at Domaine Gueguen. Certified organic production. From a south west exposure site on shallow Kimmeridgian soils, vine age is around 40 years of age. Direct pressing, cold settling and malolactic fermentation completed in stainless steel. The wine spends 6 months on fine lees. This is lively with lemon pith, green melon and white apple flesh. Some dainty white flowers and creamed honey. A hint of dried fennel seed and white pepper. The beauty of this wine is in the graceful way the natural acidity continues to give over long moments. Slippery even. This is screaming for some white mould cheese, oozy and spread over a crusty loaf of bread. Drink now or will cellar well for another 3-4 years.

She has been nominated for the Good Food Guide Sommelier of the Year award on three occasions and claims that her experience as a Len Evans scholar as one of the highlights of her career. Shanteh hosts her own weekly podcast ‘Over A Glass’ with the Deep in the Weeds Network and spends her time writing for various publications and judging at numerous wine shows across the country.
