The Griffin is where the team at Ross Hill lay it all on the line, in pursuit of an iconic wine. While many of the Ross Hill wines have good youthful drinkability, this is quite a different beast, which is built for the cellar. It’s a blend of Merlot, Cabernet Sauvignon and Cabernet Franc that starts out with a bright, mid ruby colour before jumping into enticing aromas of red currant, graphite and tobacco leaf with ample oak in support. Tremendous power on the palate but what stands out most is the structure right now – juicy acidity and firm tannins which support a sustained finish and demand time to soften. It will be good but needs to come around and, when it does, will be perfect with premium grade beef fillet.
