Cold-soaked, 5% whole bunch fermentation, and matured for 11 months in French oak. Some sage and bay leafy notes on the forefront rising to blood plums, morello cherries and bleeding pomegranate seeds. The palate is pure cherry pit with sweet paprika and dried fig. A mealy powder of tannins comes through. In fact it’s the finesse of tannins that stays with you for long after you’ve put the glass down that’s truly impressive. Drink now or will cellar for another 3-4 years. Ideal with pork and fennel sausage rolls or a German meal of pork and cabbage.
