Central Otago Pinot Noir always brings weight and density of flavour, but this little beauty isn’t about to do the big reveal all at once. It’s one of its big attractions: it simply won’t be rushed. In many respects, the Pinot was more defined and nuanced the second day after opening. Lifted in scents of briar, earth, autumnal leaves, forest floor, black cherry, cassis and spice. Time in bottle has brought with it a lovely complexity aided by woodsy, spiced oak. Highly concentrated in flavour, it draws power as it builds in the mouth. Well composed open-weave, chewy tannins complete this most impressive Pinot from The Canyon vineyard, perched high on the terraces of the Bendigo sub-region.
