It is great to see some of the biggest names in sparkling wine getting onboard the Methode Ancestrale train, which is no better sign than this style is gaining in popularity. It is the old fashioned method for making sparkling wine before the Champenoise improved on it to produce bright, clear, fresh wines, which can be outstanding.

This wine is a clear, pretty, pale onion skin pink until you give it a subtle shake to disturb the sediment. The aromas are delicate and beautifully fragrant – strawberry, rose petal and fresh pastry before more earthy nuances take hold. The bubbles are silky and fine providing great finesse under which is quite powerful fruit that drives a lingering finish. It’s a super food wine and you’ll have a good time finding dishes to match.
