Michael Twelftree runs to the beat of his own drum and he is always happy to go against the grain. And a premium semillon from the Adelaide Hills is exactly that, although it is a restrained version thanks to the cool Adelaide Hills climate.

What really stands out first in this wine is youthful vitality, considering its 3 years of age – this wine is taking its time and still has a way to go. The fruit is piquant and lifted – kaffir lime leaf, lanolin and honeydew with subtle barrel spice. It’s delicate and detailed which is not the usual Two Hands style. Bright and juicy, the palate is textural, more citrus fruits and oak making for a wine of substance. There is also understated power and bright acidity which all lead through to a long yet fine finish. It is not quite ready yet but when you do choose to crack one match it up with salmon sushi and sashimi.
