Grassy, bright and developing well. It’s unusual to see SBS – or SSB, for that matter – that will not only last in the bottle, but is designed with that exact future in mind. And I’m glad to see someone in the region doing it. Shaved grass, pineapple and honeycomb – it is in a really beautiful place. In the mouth, it is round and concentrated, with almond meal, pineapple cake and beeswax. But there is also lime pith and chalk. A fascinating flavour profile. And though there are plenty of tertiary characters spilling out, the acid is still striking. It feels nimble and fresh. This is a beautiful example of an unexpected wine, and why we should not underestimate this style of wine. Drink with crumbed pork cutlets.
