Basket pressed, wild yeast, no malo and lees stirred monthly for 8 months in older puncheons. Flinty, waxy deliciousness like candied lemon peel, with a salt kiss. Honeysuckle and strawflower pollen. Chamomile and daisy chains. There’s a lovely fruit sweetness, which is hastily swept up by a thirst-quenching crushed white stone minerality. A wine founded on texture, place and with oodles of savoury character. Some might say Roussanne is a blender and can’t hold its own. I’d say, those people need to try this wine. A cool, stoney finish rises as the final note.
