Wild fermentation and occasional battonage with natural malolactic fermentation. Custard apple, baked pears and lemon custard. Churned butter, flaky pastry and cashew cream. There is a punch of driving acidity with a hint of green olive brine. Oak cuddles the wine but allows the savoury raw nuttiness to shine through. Generous in Chardonnay flavour, this is a wine that covers all the fruit bases hints of tropical, orchard fruits wrapped in green citrus. Generous in Chardonnay flavour. Drink now or will cellar for 5 years, this is a wine that would complement new season asparagus with generous spoons of hollandaise sauce.
Shanteh cut her teeth at Sydney’s Award-Winning Quay restaurant where she worked for over a decade and was Head Sommelier from 2018 till 2022. She has been nominated for the Good Food Guide Sommelier of the Year award on three occasions and claims that her experience as a Len Evans scholar as one of the highlights of her career.
