Not a lot of of people know it but Sparkling Rosés can be a brilliant and unusual match for a wide range of dishes. It has a pale salmon colour with fine, creamy bubbles and opens up with concentrated wild strawberry aromas under which there is plenty of savoury, brioche complexity – much more than you’d expect for a wine at this price. The palate is then bright and youthful, with crisp acidity and some attractive textural richness, which in particular drives its potential for food matching. The wine finishes with power, complexity and a long finish, again with those savoury yeasty brioche elements adding plenty of interest.
