I love the concept for this wine – grapes picked cold under lights, in the middle of the night, to keep them as cold, and the juice as fresh as possible. That’s one of the secrets to this wine, but there is another. It is also a blend of chardonnay and pinot noir fruit from the Pyrenees and the even cooler Macedon Ranges, which gives it some serious, and I mean serious, class.

The wine is pale in colour and has beautifully fine bubbles. It is also instantly appealing with huge complexity on display. There is brioche and praline aromas with a citrus and floral backbone to match. The palate is crisp, dry and refined with complex fruit sitting on a bolt of acidity (thank you Macedon Ranges) which drives a long and fine finish. It is super young too so feel free to put it down, at least for a couple of years, to see this wine at its best.
