A blend of 45% Pinot Noir and 55% Chardonnay. Disgorged in October 2025 spending just over 3 years on lees. Dosage leaves the wine with 7.5 grams per litre of residual sugar. Fast bubbles rise to a tight galaxy. Complexity from the maturation shows: Nougat, pastry, water cracker, cherry Danish, vanilla ice cream richness, citrus pure lemon juice, grapefruit pith and roast chicken chips brininess. Displays a refined mousse. At start, the palate opulent and ripe up front with ginger, honeyed tones, red apple, stone fruit, nougat before shaping finely into a tight finish with a chalky texture.

A graduate of the Australian Wine Research Institute's Advanced Wine Assessment Course #47 he was awarded with Distinction WSET Level 3 in Wine & Spirits, has been an Associate Judge for the New South Wine Awards plus a couple of little stints helping out in the Hunter Valley and Tasmania during vintages with small but quality winemakers.
