Prosecco is adored for its sparkling fun and zesty fruit, often fairly straightforward and simple. But Prosecco can also be layered and interesting, vying for a position amongst some of the more complex sparkling wines, which is the case with this single vineyard beauty. 

It pours a glorious pale gold, the bubbles releasing aromas of jasmine blossom, lemon and lime zest and Pink Lady apple sorbet. 

It’s drier than many Proseccos but with plenty of vibrancy – white nectarine and lemon curd, slices of fragrant honeydew melon bought by the slice from a farmer’s market. There’s a hint of chalky minerality and a spritz of spice; kafir lime and a fine dusting of white pepper. A creamy mousse and sherbet-like acidity complete the picture. This is serious Prosecco, which really just elevates the fun.
