Cape Mentelle Cabernet Sauvignon 2016

The team at Cape Mentelle cited the 2016 Cabernet Sauvignon as a triumph – and it is easy to see why. Although slightly shy upon first look, this wine opens up beautifully and reveals the full extent of the attention to detail in both vineyard and winery. Cape Mentelle have some very fancy machinery that essentially selects individual, 10 out of 10, superstar berries from the sorting table, resulting in wine that is pure, precise and perfect.
This is classic and poised, long and layered, with graphite minerality and dense, cocoa powder tannins. The palate shows roasted meats, supple red fruits, rosemary and delicate spice. A quick decant (I suggest doing it while your rack of lamb is resting) will enhance the drinking experience and ensure all the charms and complexities of this wine are celebrated.
