The workhorse of the Clover Hill stable. The three traditional varieties at a blend of 53% Chardonnay, 42% Pinot Noir and 5% Pinot Meunier. At least 24 months on lees to build the complexity and flavour. Almost medium straw yellow and fast-moving beading. Inviting and rich aromas with honey and cream, near café latte richness over more signature Tassie notes of apple and briny oyster shell. A little strawberry red fruit and cracker biscuit, too. Bright and fresh with a tight mousse, the sharp Tassie acidity smoothed over with a little creaminess through the mid palate. Toothsome and crisp through the finish. Ever reliable and a pleasure to enjoy.
