Whole bunch pressed and all batches fermented individually before secondary fermentation in bottle (méthode traditionelle). Medium lemon gold. Fast rising bubbles with savoury biscuit, frangipani and jasmine florals, samphire, brioche, green apple plus a just opened jar of yeast spread. Tight flavour profile with blossoming mousse trough a square shouldered structure. A little chalky drying grip to the long savoury, yeasty, toasty finish. Powerful and complex with many years ahead.
