2017 was a perfect year for sparkling wine in the Adelaide Hills. A long, cool growing season allowed beautiful flavour development whilst retained perfect acidity, especially in the hands of one of the finest sparkling winemakers in Australia. It’s no secret Deviation Road winemaker Kate Laurie loves Champagne. Having completed her winemaking studies in the region she applies great expertise and patience (in this case, 3 years on lees) to pristine Adelaide Hills fruit.

This wine smells like apple blossoms, lemon zest, pink cherries and sea shells. There’s also the aroma of homemade sourdough in the oven, just as the golden crust begins to form. 

Delightfully refreshing acidity is supported by flavours of grapefruit zest and soft serve ice cream in a waffle cone; with a lingering dry finish.

Serve with a big pot of clams simmered in white wine with a generous handful of parsley and plenty of crunchy sourdough.

Nicole loves wine. So much so that she gave up a successful career in Pharmacy, perfected her spitting technique, and moved from sunny Queensland to the wine-drenched laneways of Melbourne. Stints in hospitality, wineries, retail, sales and marketing filled the next few years while Nicole built her knowledge and searched for the right path. She completed the Wine and Spirits Education Trust (WSET) Diploma in 2016 and became a certified WSET Educator the following year.
