Sourced from the Dexter family farm in Tuerong, this is all Dijon clones. Fermentation occurs in 500L French puncheons 50% new, occasional battonage and full malolactic fermentation. Plucked Meyer lemons meet a pansy of wildflowers here in this 2023 incarnation, you’ll be met with Jonquil and Freesia blooms which are also dotted with pulpy finger lime droplets. Arching rays of acidity allow green apple skin and white nectarine to shine. Oak is receptive by subtle notes of grated nutmeg and creamy cashew. A spirited wine that carries on the palate for very long moments, there is power here disguised in all the charm and charisma of modern cool climate Chardonnay dressings. Straight to the pool room for this one! Drink with a mushroom pizza bianca and swoon.
