This is a juicy delight, named for its wild yeast fermentation. It’s an excellent appetite whetter to serve with freshly shucked oysters and some raw fishy things… aromas of lemon peel and freshly mown grass with vanilla, pear and passionfruit curd over chalky mineral, wet pebble. The palate is soft and creamy from ten months on lees but with a powerful and driven line of acidity zing and punch – savoury, saline, finishing crisp and punchy.
