The newest label in the Clover Hill range. 66% Chardonnay, 32% Pinot Noir and 2% Pinot Meunier for seasoning. Primary fermentation in large format French oak Foudres and then secondary fermentation in bottle with 14 months on lees. Light yellow gold colour with super fine beading. Rich, deep aromas. The time in the large oak leaving a slight woody, smoky influence with doughy leesy and brioche notes underlining grapefruit, green apple and sea spray. There is then a deep and powerful palate with a firm push of citrus and pomme fruit with intense acidity that rings bell like through the long finish with lingering briny sea spray. A serious, profound sparkling.
