A traditional-method sparkling wine from the Tamar Valley, composed of Pinot Noir, Chardonnay and Pinot Meunier. The blend draws predominantly on 2022 and 2021 base material and spent two years on tirage before being disgorged in July 2024. Beautifully pure, crisp and bright, it opens tightly wound before unfurling with impressive energy and detail. Lemon meringue, brine, lemon zest, green almond, chalk dust and green apple skin lead, slowly yielding to gently balancing autolytic notes of pastry dough and nutritional yeast with time in the glass. The palate is taut and energetic, with a soft wash of fine bead offsetting tangy green apple skin, lemon juice, green almond, just-ripe pear and brine. There’s grip through the sides and electric acidity throughout, carrying the wine to good length, the finish tinged with attractive green-almond and green-apple skin bitterness. Be patient — let it warm and come out of its shell — because when it does, it shines.
