Wow! This is powerful! Imagine what 7 years on lees does (Disgorged July 2019), a blend of one-third 2009, 2010 and 2011.
The 70% Pinot Noir from Grand Cru vineyards really adds to the structure making this a bold and muscular Champagne, not for everyone. I opened it with oysters but after it had revealed its vinosity, it makes you think of a Morel risotto or even a steak with Paris butter. For a snack, think a rabbit rillette.
It’s really layered and expansive. The concentration and complexity is compelling but with an impressive finesse. The cherry notes from the Pinot Noir are so seductive. Every sip gives more depth into its soul; it’s impossible not to take a moment to comprehend what is going on in this wine.
On the palate there are white truffles, ripe peaches, apricots and chamomile while the nose gives out preserved lemons, kumquat jam and almond cream. This is a gastronomic Champagne which I recommend drinking in Burgundy glasses.
