Makes a real feast of ripe Chardonnay fruits with aromas of nectarine, yellow peach, melon, citrus and honey biscuits with rising yeast-lees brioche. Flavours echo the aromas. Wild yeast or natural yeast fermentation – that is, without the use of cultured yeasts – combined with barrel fermentation bring added layers of flavour that embrace toasty honeyed tones, a warm mealiness and gentle spice. Together, it all works well, texturally and flavour wise.

Jeni Port is one of Australia’s top wine communicators. Based in Melbourne, Jeni created the first wine column in the (then) Sun News-Pictorial before moving over to The Age and becoming that paper’s longest-serving wine writer. She is a founding board member of Australian Women In Wine and is the co-deputy chair of Australia’s Wine List of the Year Awards and China’s Wine List of the Year Awards.
