The second Hilltops Shiraz made by the team hails from a vineyard in Boorowa, which is even cooler. The winemaking for both of these wines is consistent, to allow the sites to reveal their differences, with pressing to French oak puncheons, one quarter new, for fourteen months maturation. This is a deep garnet hue and gives us lifted aromatics with bright cherry notes, red fruits, dried herbs, bay leaves and raspberries. Utterly delicious, with refinement and poise, this is impressive stuff. A wine full of life and energy with silky tannins and immaculate balance, there is a flick of acidity and excellent length. Love this and what cracking value it is. Enjoy it over the next eight to ten years. Matt Burton continues to smash it out of the park and anyone not taking notice of his wines is doing themselves a disservice.

When not writing, fly-fishing for trout in NZ or bonefish on the flats of Cuba, travelling or smoking cigars, he is no doubt following a variety of sporting teams – the occasionally glorious Queensland Reds rugby, the dysfunctional Washington Redskins, the dodgy Arsenal and especially revels in the world restored to its proper axis with the return of the Ashes to their rightful home.
