Gundog Indomintus Albus 2025

Brush up on your Latin and at the same time enjoy a Hunter Valley Semillon with a difference. The difference is an early picked, barrel fermented style where a portion was matured on skins for six months. Key lime pie, orange peel, grapefruit, lime peel and juice, ginger, herbs and buttered popcorn. Covers the gamut of trad Semillon characters, but then the leesy characters come into focus on the palate and with them the rise of earthy ginger, quince, chamomile with a warm background nuttiness. It’s complex, a touch exotic in a good way, creamy in texture and nicely restrained. Falls completely, beautifully, into the Indomitus school of winemaking a la Gundog.
