Lemon oil sprayed from its zest, oyster brine dripping from the shell, Geisha face powder and crushed limestone. Delicate white florals and white peach flesh. The aromas are dialled up in intensity but it’s equally fine and ethereal across the palate. You’ll discover almond milk creaminess, nutmeg and cinnamon with acidity that thrills without a squeak of shrillness. A pumice stone like chalk on the finish. Oak carries the flavours and yet the cool climate of Tasmania is the true hero here. If I was to sum this up in two words I’d say ALL DAY, I would drink this all day and be a very happy woman indeed. Serve one bottle per person, it’s impossible to share.
