Fruit is based in the 2021 vintage with 30 months on lees, 47% Chardonnay, 43% Pinot Noir and 10% Pinot Meunier and made in an extra brut style. Candied golden peaches, baked apple and lemon curd. Some honeysuckle blooms that lead to a delectable array of almond praline and toasted pine nuts. The good proportion of Chardonnay allows the wine to slither over the palate and the addition of reserve wine adds further complexity with sand stone, sea spray and oat milk creaminess. This is drinking beautifully and would work equally well with poached chicken salads but also has the ability to cut though creamy carbonara dishes too. A very reliable wine for all occasions.

Shanteh cut her teeth at Sydney’s Award-Winning Quay restaurant where she worked for over a decade and was Head Sommelier from 2018 till 2022. She has been nominated for the Good Food Guide Sommelier of the Year award on three occasions and claims that her experience as a Len Evans scholar as one of the highlights of her career. Shanteh hosts her own weekly podcast ‘Over A Glass’ with the Deep in the Weeds Network and spends her time writing for various publications and judging at numerous wine shows across the country.
