Fruit is from the certified biodynamic Dark Horse Vineyard in Murrumbateman. The 4th bottling of this wine, 12 months in French Oak. Scuro means ‘dark’ in Italian and this wine is a well of black tinged berries. Black plums, cherries and mulberries. There is an Ancho-like smoked chilli element with thistle, carob and espresso coffee. Some tomato stem and recurrent vine. Its elevated acidity leads the palate with some middle palate cassis and plum cake and some fine but grainy tannins that slowly elongate across the palate. A unique wine that would fit the bill for a BYO dinner to any Mediterranean restaurant, where heavily spiced meats and tomatoes feature. Would also do justice to a pepperoni pizza.

Shanteh cut her teeth at Sydney’s Award-Winning Quay restaurant where she worked for over a decade and was Head Sommelier from 2018 till 2022. She has been nominated for the Good Food Guide Sommelier of the Year award on three occasions and claims that her experience as a Len Evans scholar as one of the highlights of her career. Shanteh hosts her own weekly podcast ‘Over A Glass’ with the Deep in the Weeds Network and spends her time writing for various publications and judging at numerous wine shows across the country.
